La Bottarga è considerata il Caviale del Mediterraneo, l’oro della Sardegna. La bottarga è un prodotto del mare, non usato di frequente, ma in grado di dare sapore ai piatti come pochi altri alimenti fanno. La bottarga è un alimento costituito dalle uova di muggine salate ed essiccate. Viene prodotta principalmente in Sardegna. Come viene fatta la bottarga, tra la fine dell’estate e gli inizi dell’autunno i pescatori vanno per mare in cerca di cefali, pescano solo le femmine più grosse e dalla caratteristica palpebra adiposa, ne incidono il ventre per estrarne le sacche cariche di uova: inizia così la preparazione della bottarga di muggine. Per ottenere la bottarga di muggine o di tonno viene estratta dal pesce femmina la sacca ovarica facendo molta attenzione a non romperla. Dopo essere stata lavata per eliminare tutte le impurità viene sottoposta a salatura, con sale marino, adagiando le uova su una tavola di legno stagionato, fino a farle diventare interamente bianche. Poi viene deposta sopra le bottarghe un’altra tavola di legno stagionato per la pressatura, e sopra questa dei sassi, pesanti abbastanza da comprimere le sacche e permettere al sale di essere assorbito interamente, un periodo che varia dai 10 ai 15 giorni, a seconda della grandezza. Fatto questo vengono fatte asciugare all’aria per qualche giorno e stagionare in un luogo asciutto e ventilato per almeno 60-90 giorni, e dopo essere state risciacquate del sale in eccesso, le sacche asciugheranno e prenderanno il loro caratteristico colore ambrato carico, tendente al rosso, ed il loro profumo delicato di mare e sale. È ricca di Omega 3, elementi preziosi per la riduzione del rischio di infarto, di mortalità cardiovascolare, con influssi positivi sul sistema neurologico, riducono gli stati infiammatorii dell’organismo.  La bottarga contiene anche lo squalene che è uno steroide da poco valorizzato in campo medico e terapeutico per nutrire la pelle, alleviare il dolore e l’infiammazione delle articolazioni. Inoltre, è utile per la difesa contro virus comuni, per mantenere sani i sistemi scheletrico e circolatorio e come potenziante delle masse muscolari.
