Da oltre 300 anni nel cuore della Sardegna si prepara “su filindeu”, i “fili di Dio”: un tipo di pasta allungata. La tecnica è antica e complessa. Tramandata di madre in figlia e rimasta immutata fino a oggi, sono ormai rarissime le donne nuoresi che la sanno padroneggiare. La tecnica è così complessa che il famoso chef inglese Jamie Oliver, recatosi in Sardegna per impararla, ha dovuto rinunciare. L’impasto costituito da semola di grano duro e acqua, viene lavorato a mano fino a renderlo elastico. La pasta ottenuta viene arrotolata e tirata con le mani fino a ottenere tanti fili sottili. Ad ogni ripiegamento i fili di pasta raddoppiano, diventando via via più sottili, fino a diventare spessi come un capello: i fili di Dio, appunto, “su filindeu”. Non ci sono indicazioni precise, non ci sono tempi né regole scritte: solo l’esperienza permette di capire il momento esatto in cui la massa di farina e acqua è pronta per essere trasformata nei sottili filamenti. Una volta terminata la preparazione, i fili così ottenuti si mettono su un piano circolare ad essiccare. Il risultato è determinato dalla maestria di chi li lavora. I filindeus vengono utilizzati per la preparazione di minestre a base di brodo di pecora, con l’aggiunta di formaggio fresco.
