Pasta Fregula:

La fregula è un formato di pasta sarda tradizionale secca, di semola di grano duro, piccolissima e a palline irregolari. Poco più grandi del couscous e di colore ambrato, hanno diametro tra i 2 e i 6 millimetri, sono ruvide, porose e adatte ad assorbire i condimenti. La Fregula ha origini antichissime. I primi documenti che citano questo prodotto risalgono a oltre 1000 anni fa. Secondo alcuni studiosi, questo tipo di pasta si diffuse nella nostra isola grazie agli scambi commerciali con Fenici e Punici; altri sostengono che la sua creazione si debba esclusivamente ai sardi. La più famosa ricetta sarda con questo tipo di pasta è la Fregula con arselle, un ottimo primo tipico soprattutto nel Sud Sardegna. In tutta la Sardegna è diffusa l’abitudine di condire la Fregola con sughi, al pomodoro o in bianco, a base di pesce. Ma non solo: la Fregula sarda si presta a tante preparazioni diverse, dalle più ricche come la Fregula ai frutti di mare ad altre di origine più povera come la Fregula incasada, un primo piatto con ingredienti semplici: prezzemolo, pomodoro, talvolta zafferano, e tanto formaggio pecorino grattugiato. Oltre alle ricette tradizionali, un prodotto eccellente come questa pasta è perfetto anche per piatti più complessi e abbinamenti più originali. Si usa infatti spesso cuocere la Fregula sarda risottandola, cuocendola cioè aggiungendo acqua bollente o brodo come fosse un risotto, oppure creare delle minestre; puoi scegliere ingredienti preziosi come la bottarga o più classici come le verdure di stagione.
