Lo Zafferano, detto anche “oro rosso”, è la spezia più preziosa del mondo e si ricava dagli stimmi trifido – lo stelo centrale lungo 2-3 cm – del Crocus sativus, un bellissimo fiore violetto. Come tutti ben sanno, lo zafferano è una spezia molto usata in cucina per insaporire cibi, dolci e bevande, ma anche in medicina per le sue tante proprietà benefiche e curative. Lo zafferano si ottiene infatti dall’essicazione, e dall’eventuale macinazione, se si tratta di polvere, degli stimmi di un bellissimo fiore violaceo appartenente alla famiglia delle Iridacee. Si tratta di un crocus, il cui nome scientifico è Crocus sativus, che oggi deriva da una intensiva selezione sul Crocus cartwrightianus, un fiore selvatico originario della Grecia e dell’isola di Creta. Per ottenere lo zafferano, di questa pianta erbacea perenne, si utilizzano solo i tre filamenti interni al fiore, gli stimmi, che hanno un colore arancione-rossastro. Per produrre un Kg di zafferano secco occorrono circa 170.000 – 200.000 fiori raccolti manualmente in circa 500 ore di lavoro. Di questa varietà, utilizzabile in cucina come spezia, ne esiste un solo tipo, che per di più non nasce spontaneo in natura ma deve essere coltivato. C’è poi una grande differenza tra lo zafferano in pistilli e quello in polvere in quanto spesso, per produrre la polvere, vengono utilizzate anche parti meno pregiate del fiore, e non solo gli stimmi, abbassando così la qualità del prodotto finale.
